You can use chicken broth if you prefer, but Id add some extra flavour into the sauce see notes in the recipe. From what I can gather however, city chicken likely originated during the depression here in the US. Mom always floured each city chicken before egg wash and bread crumbs. Then dip in flour and garlic pepper. I usually serve them with a bacon salad and some boiled baby potatoes.
